Remove and cool, then crush with a large pinch of salt using a pestle and mortar. Mix in a bowl with the cucumber. Set aside.</p><p><br /></p><p>STEP 2</p><p>Put the chicken in a bowl and rub in the oil and five-spice, leaving to marinate for an hour or use straight away. Tip into a bowl and mix with the lamb, egg and seasoning. using damp hands, shape into 16 small meatballs.</p><p>STEP 2</p><p>Heat half the vegetable oil in a large non-stick frying pan. Fry the meatballs in batches over a high heat until golden, then set aside.</p><p>STEP 3</p><p>Heat the remaining oil in the frying pan, add the onion and cook for 3-4 mins until beginning to soften. Add the curry paste and fry for 1 min, then tip in the tomatoes and stock and bring to a simmer.</p><p>STEP 4</p><p>Add the meatballs and simmer for 15 mins until the sauce is thickened. Stir through the spinach until just wilted. Leave to infuse for at least 48 hrs or up to 1 week.</p><p>STEP 2</p><p>Once infused, line a sieve with kitchen paper and set over a large bowl. Pour in the vodka, then discard the strained berries and flowers.</p><p>STEP 3</p><p>Tip the sugar into a pan with 350ml water and gently heat until the sugar has dissolved. Turn up the heat, bring to a simmer and cook until syrupy and reduced by half – about 10 mins. Cool to room temperature, then add 100ml to the elderflower liquor. Stir well and taste, adding more until you are happy with the sweetness.</p><p>STEP 4</p><p>Decant the vodka into bottles and store in a cool, dark place. Melt the butter in a large non-stick saucepan, then stir in the flour to make a thick paste, continuing to stir for 3-4 mins. Remove and discard the bay leaves from the milk, then gradually pour it into the flour and butter mix, continuously stirring to keep the sauce smooth. Add the mustard, thyme, truffle paste and porcini powder, then stir in the taleggio cheese and mozzarella until melted slightly. Remove from the heat, tip in the macaroni and stir to coat. Scrape into an ovenproof dish. Will keep chilled for up to 24 hrs.</p><p>STEP 3</p><p>Heat the oven to 200C/180C fan/gas 6. Sprinkle over the cheddar, breadcrumbs and parmesan, and bake for 20 mins until golden. For a crispy top, grill for 5 mins or until just golden.
