Here is some other odd zhongzi. The recipe is based on Thai tapioca dumplings, Sawku Sai Muu. The pastry dough is made alongside tapioca pearls. They are called crystal zhongzi because the pastry is translucent.  The pastry is real soft, bouncy, rubbery together with chewy. I actually similar the texture. The filling is delicious together with spicy plenty to seat the correct kick.  They await to a greater extent than crystal clear when hot - warm. This recipe makes most xviii - xix small-scale dumplings.

Dough:
450 - 500g tapioca pearls
1.5 tsp salt
2 tbsp fried shallot or fried garlic oil

50g preserved radish/ chai bo
25g dried shrimps
1 heap tbsp chopped medium hot ruby-red chillies, most 1 large or 2 medium chillies
2 - three cloves garlic
1 small-scale carrot
1 chunk of jicama or daikon/mooli (about 125 - 150g), if non available purpose salad radish or to a greater extent than carrot, H2O chestnut is also real good
most 15g dried shitake mushroom
cooking oil
slackened cornflour. 1 tbsp cornflour/cornstarch mix alongside 1/2 loving cup water

  • Cut/ roughly chop save radish. Rinse together with squeeze dry out to withdraw some of the saltiness.
  • Soak dried shrimps, drain together with chop
  • Chop chilli together with garlic
  • Finely die carrot together with jicama/daikon
  • Soak mushroom, squeeze off excess H2O together with cutting into real tiny pieces
  • Heat most 1 - 2 tbsp oil, add together garlic stir till fragrant. 
  • Add pork, stir tike till meat is browned.
  • Add remaining ingredients. Stir tike till heated through together with fragrant. 
  • Have a gustatory modality if non salty enough, add together a dash of fish sauce. 
  • Stir inward slackened conflour. Till till sauce is thickened. 
  • Remove, embrace together with larn out to cool.

I made these dumplings quite small, usually ane leafage is plenty for 1 dumpling unless the leaves are real narrow or small.

Cooking
